They are excellent, well explained and full of useful tips and tricks - I seriously cannot recommend them enough.
Chris has a superb down-to-earth way of explaining things that just makes sense and is very easy to understand.
The Butchery DVD is particularly good as they demonstrate several ways to butcher a carcase at home with basic household kitchen knives for those people that don't have a full larder at their disposal.
