just made some for dinner, here's a rough recipe.
2lb venison mince.
Half a very large red onion very finely chopped.
generous splash of worcester sauce
salt and black pepper to taste
Chopped parsley.
Teaspoon mixed herbs.
Half a handfull dried breadcrumbs.
2 eggs.
Mix it all up and leave in fridge for a couple of hours, before shaping into burgers using flour to prevent it sticking to your hands.
Top it with some mature stilton when nearly cooked.
