Are these black/red spots normal on roe dear fat?

That's blood spotting and is restricted to muscles. I believe what George has shown us here are haemal nodes.

"Hemal nodes usually occur in the fat that lies along the vertebrae of the neck, near where the trachea is found. Hemal nodes may also occur in the abdominal cavity in the fat located along the vertebrae near the tenderloins. These nodes are numerous in ruminants (deer, elk, cattle, sheep), occur in small numbers in canids (dogs, coyotes, wolves), and are absent in many other animal species."

Thanks - haem nodes? As they are so common I wonder why they are not covered in DMQ and large game training?

I'd never heard of them and at one time I had to name all the little bumps on bones muscles attached to! I have looked in a number of textbooks and 2 undergraduate level anatomy books they don't even feature in the index (these are comprehensive indexes)! They are mentioned in my meat inspection text and mentioned in a histology text. I have more books at work I will look in.
