Mix together 1tbsp of mixed herbs with 1tbsp of finely chopped garlic (or garlic powder)
Rub the mixture onto the leg and leave in the fridge overnight

Pre heat oven to 160c
Place the leg into a shallow baking tin and drizzle with olive oil
pour 1/2 pint of beef stock into the bottom of the tin
Cover with foil and cook in the middle shelf for 3 and a half hours

Use the juice in the bottom of the tray to make a rich gravy
just add 3tsp of Bisto powder and simmer in a saucepan for 3 or 4mins

I lifted it out of the tray to carve and it almost fell off the bone....

Delicious!!!

And with the leftovers we did wraps with shredded venison, Hoi Sin sauce, red peppers and spring onion, accompanied by a mixed leaf salad and garlic mayonaise.

Si, thanks for a cracking recipe, did a roe haunch last night and it was absolutely fantastic, very tender and moist.

Accidentally slipped in a bottle of beer in the pan, really added to the flavour and the gravy.
