The South West Scotland Branch of the BDS will be holding an Activity Day at Millhouse Deer Farm, Lockerbie on the 31st August 2014 commencing at 10am. We will aim to finish by 4pm.
The day is aimed at those intending to start their DSC 2 this winter or anyone simply wishing to improve their lardering techniques.
The day will be split into two with one group gralloching in the morning and in the afternoon butchery. Gralloching will be hands on with the opportunity to remove both green and red pluck, feet and head under the watchful gaze of 3 x AW's and a BASC Assessor. A vet will also be in attendance for any complicated questions.
The butchery will be supervised by a retired professional butcher and will also be hands on.
The deer farm is situated approx 3 miles north of Lockerbie on the M74 with easy access from both north and south. The venue will be signposted.
