We remove the hindquarters and backstraps, clean and age for a few days, then cook - it's a strong flavoured meat, goes well in stirfries, curries, stews. Or roasted.

Congratulations to you for being able to hunt in such a lovely countryside....
Maybe there will a time in the far future to give it a try and go there, it looks like a MUST HAVE!!!

Nice work Bro, a coupe of mates and I did the 2010 Wap ballot in Fiordland and it was the experience of a lifetime.
Didn't realise wallabies had been introduced over there. As for the shorts, well I have to admit I've adopted them as standard hunting attire over here even though we have prickles and snakes. Much easier on the legs for hills than long pants.
