boning shoulders

when cutting the carcase up until now ive always diced ths shoulders and jointed/boned the rest but how would you go about boning then rolling the shoulders to make a couple of extra joints and is it possible to do on smaller deer such as roe and still get a reasonable sized joint.
 
I do it just like boning out a haunch, just slowly work the meat away from the bone with a good knife. Then as it doesn't make as nice a joint as the haunch I usually role it with a cranberry or apricot stuffing, then tie with butchers string and slow roast
