Best Christmas turkey ?

Cooked right even a cheep supermarket turkey tastes good. Max 140 degrees, cook slow and they’re always juicy. Mind you I much prefer hand reared goose. Proper Christmas fayre.
 
Turkeys are too big to cook whole and do a good job. Crown it then bone out, stuff and roll the legs, comes out much better and cooks quicker.

I used to work at Colchester market (stanfords) and we had three turkey auctions at Christmas, all New York dressed birds. Plenty of ducks geese and fat chickens as well. Worth a look if it still happens, and a watch of the butchers to see what is over or undersupplied that year.
