Sorry but I think your marketing may be way off the mark, who logs onto Eat game ? Most probably people who already eat game, looking at of the pictures from Scottish venison would not make me buy there product, butchers in tweeds ? A very wet roe and some very rare steaks, obviously aimed at a very small market. As I said burger fuel sell venison burgers, this is a main stream burger seller not a niche burger store, most of the customers would not know what a wapiti or venison is, or really care, but they buy them at a premium price due to quality of

To be fair, the OP is just a few social media posts from various moorland groups and others on #ScottishVenisonDay which has been running a few years now - and its just one day on socials and some people will see an update on their socials about it for the first time and many won't. It is what it is.
The wider marketing of game in the UK is multi-faceted with many stakeholders and audiences. As regards the general public celebrity chefs in particular can and do help raise awareness as do supermarkets that stock game.
I wasn't aware of the NZ chain Burger Fuel doing wapiti burgers. Very interesting. The 'Bastard Burger' made me smile and I had a look at the Wild Heart' wapiti burger.

From reading further it seems that lead ammunition is not used by hunters affiliated with the Fiordland Wapiti Foundation for shooting wapiti or other species for environmental reasons - especially the impact on kea.
