I have one. Superb kit. Ideal for stalking in all but the hottest months.

It's for "freezer mince", and usually ends up at lasagne, stalkers pie, chilli, or similar. My usual mince has around 5-10% pork fat to loosen it up in the pan. Sausages I tend to get creative with the spices and herbs.

I am mincing a fallow doe tomorrow. I usually throw in some fatty pork belly. Tomorrow I have a choice of beef fat or pork fat. Any opinions if which to use and ratios?

I'm selling this Stuart Mitchell P120. Only used on a couple of fallow, and razor sharp as new. Comes with original Kydex sheath, together an extra LH leather sheath made by my own fair hand. Sheaths are left hand, but the Kydex can be adjusted over to RH very easily. £265 delivered to UK.
