500 degrees is too hot I aim for around 350. Use the door to regulate the heat if it’s too hot or cold. Should have a nice rolling flame coming over the top of the oven towards chimney. I always throw off a wooden peel and retrieve with metal

I just use gambrels and the swivel hooks. I also use some 300mm double ended S hooks from Keith Watson if I want to hang them via the pelvis

Buy a tripe knife to skin. I can do one in a minute with the right cuts don’t rush your butchery best to keep all your fingers and take a bit longer

See I don’t agree with you two. I don’t enjoy the ‘killing’ part but been shooting for 45 years now. Guiding I’ve seen plenty that do. Doesnt sit well with me though they don’t get to come back for another trip
