    Hot and spicy venison burgers

    Here is a recipe I tried last night, if anyone is interested. It tasted great.

    500gr minced venison
    150gr minced bacon lardons
    2 medium tomatoes pulverized
    1 medium onion pulverized
    2-3 scotch bonnets (depending how hot you like the burger to be)
    1/2 ts white pepper
    2 ts sweet/roasted paprica
    salt to taste
    1/2 ts ground coriander
    1/4 ts ground cumin
    fresh mint


    The mixture is going to be rather loose, as I do not use any egg or breadcrumbs, but this is how I like my burgers. If the heat is high enough they should stabilize fairly soon after you put them on.


    Serve with some Bulgar wheat on the side and a dif made of yogurt which has had some dried garlic granules, a pinch of salt and some extra virgin olive oil added.
