Advice wanted on training Spinone to Deer track

I have a year old Spinone , with a fantastic field pedigree from kennel in Italy. He is smartest animal I have ever had. I want to train him so that I can provide a service for tracking deer . Any advice would be greatly appreciated. I have ready access to farm land and woodland and deer skins/carcasses so I am after any guidance that can be put my way.

They look like great dogs and I've heard nothing but praise by people who have hunted with them. I would get the dogs for tracking wounded deer by John Jearney.
