Here`s the scenario.
I need some wood pigeons for some game pies and X has twenty waiting for me.

How long can they be left ungutted before they are debreasted?
I know temperatures come into the equation but roughly...

Pigeons "go off" very quickly indeed, so need to be breasted out or frozen ASAP. I always take the breasts out the same evening or they go in the freezer. If you can lay them out in a cool place they will be fine till next day but not much longer.
 
as the local innkeeper i get given thowsands of pigeons and as long as they are properly chilled they will be fine for up to a week as long as it wasnt too hot the day they were shot and left in sun or had flies at them if they do then they need doing asap
