ideal temperature for a chiller ???

Hi

whats the ideal temperature to keep a chiller at for carcass storage.

I have a little memo printed on the front of mine, it came on the chiller, which says 2-5. I have always had mine at 4.

On Mike Robinson's DVD on deer stalking and carcass preperation he talks of his chiller being set at 1 degree celcius, I was led to believe this was a bit harsh by a butcher friend so have kept mine just a little bit higher.

I would agree +7 is to hot just going by what they teach in dsc. 3 - 5 is perfect. Once chilled the carcass should not be allowed to warm above 7*c again this includes transporting to the game dealer.
As for bactiria -18 to -20 bactiria dormant. +1 to +7 bactiria grow slowly. +8 to +63 optimum. 37*c danger zone bactiria multiply rapidly.
