Putting venison into the food chain

    Hi guys,

Does any one out there supply carcasses to game dealers / butchers? If so what sort of courses do you need to do?

To supply a carcass in the skin to a game dealer you need 'trained hunter' status which you get via DSC1 or by doing the Large Game Handling Certificate.

I did the Level 2 Certificate in Wild Meat Hygiene through BASC but it is a Lantra Award so you caould give either of them a call, if you don't fancy doing the DSC Level 1

Actually I think you will find that you can sell to a game dealer as long as you supply the red offal with the carcass. The game dealer will then be able to determine if it is fit for the foodchain.
