    Best sausage casings?

    Just interested in others views on the source of the best sausage casings. I had some from weschenfelder but not sure they were the best as they seemed a little thick.

    Has to be natural hog, otherwise why go to all the effort with stalking.

    Yup, it was the natural hog casings I got. I just wondered if anyone has had experience with different suppliers

    Just go to your local butcher.and get some Lamb casings
    off him They are smaller and cook a bit easier.
    there is a company called oris who make good skins. maybe on the web.

    Very good quality!
    I've made over 3.5 tons of sausages now and no complaints!

    Slight exhageration there, I think you will find it was 3.40775 tons.

    How long do they keep?

    Section 161 of the Highways Act 1980 (England & Wales) makes it an offence to discharge a firearm within 50 ft of the centre of a highway with vehicular rights without lawful authority or excuse, if as a result a user of the highway is injured, interrupted or endangered.

    I freeze mine and they seem to be fine for a few months
