    Sausages

    The mate of mine that makes the best snags and myself went out and he took this tender young hind to make the next batch with.
    We walked together up to two deer bedded down in the bush at 30 yards.BANG!




    And mate Bob shot this young stag pre antler spike burst that weighed 96 kilos cleaned,skinned,head/legs off

    Imagine how many you can make if you mince up a sambar.

    Doc mine are all contorted in freezer bags in the cold hole. I dont make them,my mate does and so far has never taken a pic.

    60% sambar
    40% pork
    fennel
    garlic
    chilli

    and whatever else he puts in...not a huge amount of salt either as they are frozen in batches of 40 one kilo bags.

    Just recently my best seller has changed to a new recipe that I came up with 'Balti' made with Gloucester Old Spot pigs that I get locally the punters love it,that and Venison & Chilli.

    That looks a good recipie might give it a go though I love a bit of spice in mine Balti oh my god severe salivation going on here

    How do you get those sambar out once shot looks a heavy beast to be carrying any distance, I struggled getting a 120 lbs fallow into the back of my landrover let alone carrying it any where!!

    that hind was an easy one being on the bottom 'flats' I walked a K back to my HiLux and then negotiated my way through the bush to within 30 m`s of her. My mate said "we can drag her up there'

    I said "mate its a fugn Toyota,throw a rope around her neck and i will snig her up here to the flat"

    One quick reef and voila....not a problem!

    The snags are always best being minced in the coarse plate only.
