    Butchery book

    Hi, Chaps

    Can any one recommend a good book on butchery of deer, while i can get a deer into oven size pieces; it is perhaps not the prettiest of work.

    I am looking for a course to go on, but in the meantime some reading would not go amiss.

    Hi Simon
    I found a good youtube video which went through,step by step, the butchering of a deer. Can,t remember what it was titled but shouldn,t be too dificult to find.Helped me no end !(can actually fit the bits in the oven now !)

    There are very few books on butchery, they are more around anatomy and physiology and not on breaking a carcass down. This is something which is picked up with hands on experience so you can recognise where the seams and joints are with out too much hacking.

    Couple of forum members offer butchery courses specifically for deer stalkers.
    I went with 'Buckbones' who is a good bloke and great value but in Leicestershire.

    Deer Commission for Scotland Best Practice Guide has a good section on Butchery
    Butchering Deer by John Weiss has some ideas and also covers other aspects of stalking

    Hi, I was recently looking for a book myself, this was recomended and purchased, "Basic Butchering of Livestock & Game" A lot of the terms are american, but it is fine and wasnt expensive at all, under a tenner I think. I'm sure if you do a search on google you will find it.

    Although not for deer, the cuts are comparable in these two books, I would recommend them both over the livestock one mentioned as they are all colour photos to mael it easy to follow:

    You could do a lot worse than watching this excellent series of videos on Youtube...
