    How to secure bacon wrapped around a spit roast venison haunch

    Hi,

    Assume a de-boned haunch is threaded onto a spit roasting rod. Is there some way to firmly secure streaky bacon wrapped around the venison? Clearly, the method must be proof against burning away. Are there suitable wire or pins available to chefs? Cheers, K

    when i do mine i use stainless wire you can buy it in a tub its proper use is lockwire for locking bolts any motorbike shop sells it. or you could use thin wire mesh wrapped around it instead. I have done alot of roasts now on a spit and personally wouldnt de bone if using the spit method your meat will shrink and you need to keep tightening the wire or you could sandwhich it between mesh and wire tight so it will turn without dropping but if on the bone less likely to fall off or dry out.
    chicken is unreal on a barbeque spit if you use a flavoured wood the smoke really sinks into a chicken ,good luck wayne

    stainless tig rods are also good for sqewers and for holding meat ,cheap on ebay for a small pack

    wire or skewers....stainless preferably.....or stab and thread it through the meat
