Fallow Butchery

Having eaten a few times at Mike Robinson's place in Fulham (and loved it). Does anyone else cut their fallow up like a beef animal? i.e. half the animal down the spine and then cut sirloins, t-bones etc? If so what do you use to half the animal.......
 
Butchers saw or a small toothed bog standard wood saw.

Yes a wood saw is cheaper and better than the 'hacksaw' type butchers saw imo...I buy a couple of the throw away types.

Btw I cut my fallow up as one does a sheep carcase.
 
You reckon a boggo saw will do the job tidily? Halving the thing lengthways all the way along the spine? Not arguing just interested!
 
Cut a full length sambar up with a carpenters saw easy enough,or a home killed steer as well.I have done plenty of them.
 
A mate of mine cut a fallow carcase with a circular saw and spent ages getting little bits of meat off the ceiling!!
