    how long

    how long to hang the carcase for , with or with out the coat on.?

    1-2 weeks, some butchers prefer to get it cut up straight away. it's all personal preference, had some roe loin that had been hanging in the chiller 16 days tonight and it was all good.

    Another difficult question and depends upon the weather if for own consumption and without a chiller.
