    Best fat for burgers

    As the title states what is the best fat to add to venison mince for burgers. The venison I shot is very lean so a little dry for burgers but after a quick search I'm unsure of what is the best fat (for flavour and moistness) to add. What do the great chefs on here recommend?

    I use pork belly strips for my burgers.

    I ask for pork belly no rind, no bones from butcher .. Just mince it all & add

    Gave used mis shape bacon packs before.

    Used beef skirt too to try

    All was good but pork belly the best for me

    I get my local butcher to do mine he mainly uses lamb give a nicer flavour than pork

    im a butcher and when we do ours at work we use the flair fat from the belly,but as others have said,the belly itself is good........

    Cheers guys, looks like it'll be pork belly then. Just gotta pop to the butchers tomorrow.
