Looking to buy a portable kit - saw, cleaver, fillet knife, skinning knife etc. Anyone got a recommendation for a kit or tips when buying?

Buy the bits you need from the Samprene range at Samuel Staniforth it what good butchers use and is half the price of fancy sets. Buy a thin flexible boner a thicker boner a steak slicer and a good sharpening steel. I also have a chopper but rarely use it ( did I really say that). I would also get a 24" bone saw from somebody like Scobies. Learn how to use the steel and use it often during the cutting session.

Thanks for that guys. I'll look into those. I do hope that Chiron gets to use his chopper some time even if it is just on Christmas day

Build a set from Dick, and commencing with their excellent tripe knife. I did and all with matching hi-viz yellow handles so if used in the field they won't get lost:

The Tripe Knife is without doubt the most useful tool you can own! As well as slicing leg skin effortlessly, it is also really good at seperating the skin from the flesh - try it, you'll be amazed!

As advised above probably best to build your own kit from individual products.

We do most regular components (and kits) which can be seen at:
