I'm going on a mountain hunt with lots of walking/ trekking. Any recommendations for a good moisture wicking base layer that's not too itchy?

In my experience you'd have to go a long way to beat a decent Merino base layer. It's not cheap but as with everything in life you get what you pay for. I managed to get some Lundhags stuff the other year and it's the best I've had.

have a look on flea bay for 'woolpower' they do a lot of base layer gear, very warm, also available on Ray mears website. very decent stuff.
 
If your not wanting merino for about £30 (per top or bottom) you can get 'Dry Inside' base layers from most motorbike shops. I use a bike almost year round (even up here) and really rate them. Took them to Germany at the beginning of the year in the snow for driven and high seat hunts and they were great.
 
another for icebreaker. A bonus with merino over manmade is you dont stink at the end of the day.
 
String vest....seriously. Cyclists use them for keeping cool in summer as the wet shirt is kept off the skin. And in winter the string "pockets" trap the air.
 
Merino isn't really itching. In Belgium Aldi do once a year a promotion on Merino underwear. Very good price and very comfortable. In winter I use the Aldi T shirt merino base and put a merino long sleeved T shirt by Decathlon over it.
 
Goose fat, chocolate,whipped cream, two ripe cherries (to prevent nipple rash), a string vest (pressed right into the creamy, fatty, chocolate, to hold the cherries firmly in place) and, a Cashmere roll neck jumper - old School.
It works very well on two levels; you don't need to worry if you forget your lunch.
