Boar fat

Should anybody have the privilege to culling a boar I highly recommend the boar fat be used for your roast potatoes instead of goose fat, from the fat from chops etc..

I shall leave the rest to how you roast your spuds etc..

But you will not look back this also refrigerates well.

Only problem is the smell when rendering it down. My mummy did it when i was growing up, every time we shot a hog! Now i dont let her near them.

What a shame and what a waste from your side of the kitchen.

Try smoking the pig fat in chunks and THEN chopping it into 10mm cubes and frying with spuds.It is delish and while the fat renders down during the drying it imparts flavour into the taters and leaves a crispy shell...mmmmm
