I introduced 3 mates to venison whilst camping last weekend with a simple meal as follows.
Muntjac saddle, seasoned with salt and pepper grilled medium rare on a hot bbq and left to rest.
Sliced ciabbatta rolls toasted on same bbq for a minute or so, then rubbed with a clove of garlic for just a hint of flavour.
Lay one half of the bread on a plate with plenty of rocket leaf, slice the venison and lay on top, with caramalised red onion to make a cracking simple roll.
I served it with halved new potatoes in the skin roasted in olive oil, rosemary and salt and pepper.
Needless to say they were suitably impressed and have placed orders for some venison!!
