Does anyone have a definitive list of which is correct for different species?

I've always called roe young 'kids', and red and sika 'calves'. Not sure what the right terminology for the other species is though.

You’re correct so far. Roe/Kids, Red and Sika/Calves, Fallow, Muntjac and CWD/Fawns. The only slight discrepancy is that Richard Prior often referred to roe as fawns and who are we to argue with him!

Then of course you have all the different names for yearlings and different stages of growth.

There will be regional variations. I have tended to hear Roe Fawns, rather than Kids. I have also frequently heard make Sika referred to as Bucks.

I suggest that buck or boch comes from the sounding of the barking, whereas Stag or rather the highland pronunciation of “staarg” is from the roaring sound.

For government and re wilding brigade the term for all deer is “vermin to be shot on sight”.

A hart is a six-year old red stag.
What is the difference between hart and stag?

I hadn't known that there was a 6 yr age description for a Hart thus had a bit of a look about and only found the word used as to describe a "stag" the only ref to an age was the text below.
I had thought a Hart was a "good sort of stag" IE trophy worth etc.
Needs more info to be pursued.

A stag is the male of some of the larger species of deer. Hart is an old-school term for a mature red deer stag, traditionally one more than five years old. The word was used mainly by medieval English aristocratic hunters in reference to their most prestigious game animal.

Seems like your reference tallies with mine:
More than five years old = six years old +
