What size binoculars have you been using with the harness? Would a thermal spotter fit in the side pockets?

Yep. The side pockets are elasticated , but not covered. You can MOLLE on any punches though. The pic below is an HIK Thunder.
I run Vortex Fury 10x 42 with the padded insert, which fit well, snug without bouncing around. The insert can be removed for bigger binos. (as per pics below)

Do you find the harness sits lopsided if you don’t balance out the other side pouch. I have that harness also and ended up taking the side pouch off and mounting it on the bottom to keep everything level as my thermal was rather bulky

TBH I don't use the pouches for my thermal, I keep that in my smock pocket or in a belt pouch. I showed in the pics to respond to the question re fit.
