I just discovered this blog on the internet whilst researching some Chinese venison dishes.
The man is clearly a bit in the dark about deer anatomy nd there is a quite funny part where he is says that he struggles to get dinner party guests to come to his home for food.
I must admit, I think I would skip on his meals too !

It is just air dried meat. Mold isn't necessarily a sign of spoilage. Some molds are beneficial to preservation - take for example the molds on the outsides of some salamis. They lower the PH and crowd out the harmful bacteria and molds.
