I agree, Jack has excellent game processing facilities and his venison & port sausages are pretty good as well.

I don't think the price a game dealer pays has much to do with what he sells for - game dealers offer different prices to stalkers/suppliers depending on lots of things like how far they have to travel to collect, how many and quality of carcasses they are buying and so on.. Likewise - the retail price they sell jointed venison to the general public will be far more than the price they sell to butchers, restaurants and markets.
