May help some with the gralloch

These piccies are a record of a candidate who I witnessed whilst doing his DSC2 assesment and was the first deer of 3 that he shot with me on my leases.
This photograph shows the candidate inspecting for Foot and Mouth disease and he is looking for possible blisters inside the mouth

The Candidate has made the most important first incision to extract the gullet and shows the lie of the asophogus along with the trachia

The candidate has seperated the gullet from the trachia prior to making it secure

The candidate has tied of the gullet with stirile gut in two place prior to making the cut inbetween the two tie offs this secures the carcass from possible contamination that may remain in the gullet tract from the mouth and also any contaminants that may be forced back from the rumen during following processes.

The next stage the candidate has lifted the skin slightly and made the first incision this process is done by lifting the fleshy skin so as not to puncture the rumen, you will note he inserts two fingers in the stomach cavity and lifts slightly so he can continue the cut up to the sternum as an aid to not puncturing the rumen.

The Candidate has rolled the beast over onto its right hand side which aids removal of the internal organ and rumen

The candidate has identified the gullet where it attaches to the rumen prior to extraction sometimes this sticks to the side of the liver and needs easing away prior to extraction

The candidate has zip tied the urinary tract to prevent the carcass being contaminated

The candidate is inspecting the mesenteric glands in the viscera these are the beads shown itis important to make identification easier by placing the viscera cumberland sausage side down with smooth side up where they become more visible

The candidate has cut through the skin on the rear leg between the bone and hamstring and tied it up to a tree to aid further cleaning of the carcass

The Candidate is extracting the pluck containing the heart and lungs and trachia for further inspection

Great post, an excellent guide to a good gralloche.

Out of interest, was he keeping the pluck for food, or was there some sign of disease?

I've always been taught to leave the pluck in, but that was putting deer on a pony to carry them off the hill, so minimising the damage to the skin was priority.

To be honest Matt I dont really know I was only there in my capacity to observe , Their wasnt any signs of disease
at all and it was inspected and passed as suitable for the food chain.

Some people like eating heart, and definitley the liver , the lung maybe he was going to give it to his dog and the rest was for his own consumption ,I know he wasnt going to place the beasts into the food chain as such as he indicated to me that he wanted them to stock up his freezer somewhat.
I will ask him next time I see him.
