I'm hoping some members can help me with some figures i'm trying to gather.

I'm looking for the following weight information for roe deer only:

1. gralloched deer - weight of the roe deer minus only the gralloch that was removed in the field.

2. skinned deer - the weight of the roe deer carcass only, minus the head, legs, skin and pluck

3. bones - the weight of all the bones taken from the skinned deer

4. meat - the weight of all the meat taken from the skinned deer

5. sex of deer and whether adult or under a year old

cheers

why

Cant help you just at the moment because the oldie roe are evading me nicely.

Begs the question tho, why do you want this info. People might go to the trouble of getting the info if they know why you need it.

here is some information from some research I have done.

This buck weighed 52lb, weights have been rounded up or down and seasonal variations would apply. Weight loss occurs from evaporation and cut size can vary dependant on how it is butchered.

a. Viscera: Heart) .8 oz Liver) 12oz Kidneys) 4oz

b. Head and Feet: 4lb
c. Haunches: 11-4oz
d. Skin: 6lb 8oz
e. Neck: 2lb 12oz
f. Shoulders: 10lb 8oz
g. Ribs: 1lb 12oz
h. Gralloch (stomach): 6lb 12oz
i. Saddle: 5lb 8oz

Dr Atle Mysterud of the University of Oslo has done research on “dressing percentage, gross body composition and caloric value of the Roe deer”. His research shows that the dressing percentages amounted to 65.1% in adult individuals and to 58.7% in young ones.

A COMPARISON OF DRESSING PERCENTAGE IN SEVERAL SPECIES OF WILD UNGULATES

SPECIES PLACE DRESSING % REFERENCE

ROE DEER POLAND 63.5 Atle Mysterud 1973
-----------“ ENGLAND ♂ - 55 (58.3)** Prior 1968
-----------“----------- ------“----- ♀ -58 (61.5)** -----“-----“----

** Prior did not include neck in dressing weight. Figures in brackets have been adjusted.
* Venison containing head.

Hope this helps?

I am interested to see the difference in weight of meat and weight of waste from a carcass and was wondering how this changes with sex and time of year.
