A 1" tube limits your ability to shoot over 800m as the scope will not have the elevation. A 30mm tube gives the manufacturer room to fit the extra 'wind' in. Otherwise it makes no difference to the light gathering or clarity as the exit pupil is not dependent on the tube diameter.
Does anyone here shoot deer at 1000m?

None of that is taken into consideration, it is just a modern fad that 30mm is better and most 'scope rings/mounts today are advertised as 30mm so everybody follows suit.
This is a very good 'scope indeed but just 'old fashioned' for no sensible reason at all and at a good price too.

its only relevant if the manufacturer takes advantage of the less than 2.3mm at either end of the range
the 8x56 has identical specification for windage and elevation for 1" and 30mm

Maybe more luck in the "sales" section?

1" or 30mm - decision should depend on which rings you already have. :)
