Layering with a c200g merino base garment is the only advice I can give. That and two observations on outer garments:

1. Ventile expands and becomes a little stiff in rain but otherwise does what it says on the tin.
2. Paramo would be great but not rugged, so crawling through heather and bashing through thorn is unlikely to end well.

Yes, you are right about Paramo. It is a bit delicate, but can be repaired because it doesn't have a membrane but not ideal for thorns and barbed wire fences.

There is no one size fits all solution.

I've got a Swedteam Legacy Pro (printed tweed) jacket that I wear for general stalking. I really like it. I wore it in Scotland for a couple of days on the stags and it was fine but the weather wasn't particularly bad.
 
Interesting topic, I have been looking at a Hilltreck double ventile smock for a while, but haven't pulled the trigger due to the financial outlay. However I think I will be treating myself once my Christmas bonus lands. Good to read a that some of the pros are waring them out on the Scottish hills. Waterproof, warm, breathable, hardwaring and quiet, with the compromise coming with stiffness and wieght when wet. This does seem like the best sort of compromise for my outdoor activities.

Ridgeline jacket outer with under arm vents
Montane terra trouser
Sealand treggings in vorn back pack for when it get really bad
Spare hats, mid layer and gloves too in back
