Well worth a read.

House rule of ours is to avoid ultra processed foods (we make most things from scratch these days) and any with more than five ingredients. My personal exception to that is a Long Island iced tea, which has 6 ingredients. More if you include the ice and slice 😉

He (Michael Pollan) has written several good books on this subject, and I highly recommend them all if you're interested in food, how humans have evolved to eat (we're the only animal on the planet now, that can not live on solely uncooked food). He has recently went off on a tangent about psychedelic, mind altering things, of which I have no interest in. But his work in the culinary education fields is quite good.

If you have Netflix, I also highly recommend his mini-series adaptation of his book "Cooked" (same name for the mini-series). Very well done. So well in fact, that others have spawned several other mini-series along similar lines (Salt Fat Acid Heat is one that comes to mind). They're all an interesting blend of culinary awareness, coupled to the human spirit and emotions that arise when cooking, or eating (one of the most basic, primal, human acts).
