Venison and pork sausages

We managed to get a fallow knobber the other Saturday, so decided to try and make some suasages. First attempt.
Butchered the beast up as I normally do. Plenty of steaks and backstraps cut into nice fillet steak size bits.
So the shoulders and trim was minced along with some belly pork.
Old English complete sausage mix added. I've done this before as we normally just use this as meatball mix for various pasta sauces.
I got a sausage stuffing machine from ebay. Natural hog cassings were ordered along with the mix.
So away onto the garage to have a go....
Quite happy with the results and first go at suasages making.
My kids loved them too.. Bangers and mash with onion gravy.

18-20kg of suasages.
Venison food parcels handed out up my road to help the elderly neighbours
