Venison sausage rolls recipe

Thinking of doing some venison rolls for elevensies on our shoot, hasanyone got and good (and hopefully simple) recipes please as I can’t seem to find much on here…

I use the tongmaster beef sausage mix, with an extra teaspoon of both black pepper and chilli powder. Wrap in aldi puff pastry, egg wash and cook. One sheet of pastry give between 24 and 30 bite sized rolls.

I’m definitely using readying rolled pastry 😜

How much meat do you use for that please ?
 
I recently came across this website which has some excellent recipes for all types of sausages, ham, black pudding etc.

I have made the wild boar and venison recipes, both of which were excellent if you like spicy food.

I increased the garlic in the boar recipe by 50% (I have lived in France for 10 years!) I also added fresh ginger to the boar recipe.

The venison was top as it is, but I used nutmeg as couldn't find mace.

And my tip, whizz all the seasoning up in a blender to form a paste, slice the meat ready for the mincer, mix well and mince and then mix again.

That way the seasoning is well mixed in.

I made 4 kilos of boar mix on Monday.
 
So I ended up going with 500g venison mince, 500g quality sausage meat, salt, pepper, chilli flakes all mixed together.

Then put two rows of meat length ways on a roll of ready rolled pastry, rolled and cut into two finger width slices. Egg washed and cooked on 180 fan for 35mins.

All gone at elevnsies 😋👌🏻
