Just tried a venison schnitzel recepie, having recently tried it while in Croatia.
Venison steaks, bash until thin, into a bag of seasoned flour, then egg wash, then i didn't have bread crumbs so had to use crackers, fry until crispy on each side, absolutly lovely.
As it happens mike robinson has a great shnitzel recepie i've just seen on youtube.
