Ok lads youve shot your beats and taken the meat of the bone but what do you do with the bones? I make stock and freeze it!! Its so easy I also do this with my duck after Ive breasted them and legged them. Put oven on arrange carrot, leek, onion, celery in the bottom of a roasting pan put a smear of tomatoe puree on the bones that will sit on top of veg. Chuck a couple of bay leaves in a sprig or 2 of thyme and 6 or so pepper corns. Bang it into the oven to roast perhaps an hour max, stick every thing into a pan cover with water and simmer for an hour or 2, do not wash the roasting pan when you decant the bones and veg put on heat and scrape also put this into simmering pan! Strain and cool, once cooled you can a put in small tubs and freeze or put nito ice cubes bags and freeze. I do both as this gives me small amounts if Im making a little sauce to accompany loin steaks and the larger amounts will be used in the pie or even a base for a game soup!
