Very much a North American way of doing things, especially with large Elk and back pack hunting, but there are still of useful points, especially for those of us who don’t have access to large walk in chillers immediately, and who keep most of the meat for personal consumption.
If you have to carry deer out on your back, breaking them down into the major joints does make them a lot more manageable and save wrecking your back.
