Anybody know of one ? Obv very similar to a normal pig but some of the joints etc have different fat contents etc so can be cooked differently , if not a pork butchery course nr Kent ?

Not in kent, but Hanks meat and game in Ross on wye has been running a series of butchery course over the last 12 mths covering a selection of carcasses

30 minutes Utoob, all in German but the visuals should help.
Just been looking at that ... 3 hrs drive but could tie in with a night trip to forest of dean
Nothing like hands on experience though
Just completed the venison one on here advertised in essex was brilliant , its the attention to presentation etc im interested in

I see deer central in Hereford do one also but only on venison
I cut them up here just the same as deer
A friend went on one at The Ginger Pig in London - Our Classes - said that he managed to eat pretty much his own weight in sausages afterward. That would sell it to me
