Easy roe fillet in bramble sauce

Best response yet from the table, and probably the easiest I've made.

Roe fillets (or your steak/ cut of choice), sinew trimmed off. Fried in a good heavy and hot pan in a little olive oil until cooked to your taste. 6 minutes for me. Let them rest on a warm plate while you get on with the next bit.
Small clove of garlic finely chopped into the hot pan for a few seconds. Deglaze pan with a glass of red. Add 2 tablespoons redcurrant jelly. Add 150ml venison or veal or beef stock. swoosh it around and simmer until the redcurrant jelly has melted in.
Add 80-100 gr fresh brambles. Blackberries will also do :). Cook until berries are soft.
Slice through the fillets, pour over the sauce and brambles and plate up with spuds and veg of your choice.

There must be a hundred versions of the above, but this was as easy as I've found and clean plates all round.
 
Sounds good. Will give it a try come blackberry time.

My favourite so far is mushrooms/ceps fried in the juices, then melt 4oz of blue cheese of your choice into them along with 1/4 pint of single cream. Just pour over the finished medallions/steak.

Sounds yum! I do a similar recipe with pomegranate syrup. You can add some fresh pomegranate when in season as well :eek:
 
Slightly off topic, but horseradish sauce also goes very well with venison. That said, we usually end up with both the berries and the horseradish on seperate spots on the plate ; bon appetit!
 
I use Grape seed Oil for frying Venison. Heats to a higher heat than most other Oils. I had read somewhere that you shouldn't use Olive Oil for frying at a high heat.
