I would always choose to stalk in the morning over the evening. With evening you're chasing daylight and will, inevitably, get to a point where it is no longer advisable to take the shot. Even if you hit the animal you run the risk of losing it in the gloaming.
Apart from that, I still get a kick from being out before it's light and seeing the light change to the point where, rather than just shapes, you can start to discern colour. In the evening I always feel the pressure as the light fades.

I prefer mornings for many of the reasons given by other posters, I think you actually have more time with a chance of a deer in the morning and there comes a point in the evening, even if it is still light enough for a shot, when you have a risk of a deer running and not being found, and also gralloching is not much fun holding a torch in your mouth as I've found to my cost a few times!
I also don't think that you can beat being out in the British countryside on a nice morning watching the World wake up.
