I can’t comment too much on lock knives as I don’t have much experience with them (I’v always used fixed) so I apologise if this comment isn’t of any use...but a good friend of mine makes knives, they are exceptionally high quality made of the best materials. He can also custom make one to your requirements...he’s made a few for me and all been flawless. If your on Instagram search for “raptor knives”

The biggest deficit for stalking applications of most modern folding knives is the amount of recesses and slots. Be it for the attachment of belt clips, lanyards, scale screws, single handed opening and what not. This is all BS. You want to be able to clean it without having to dismantle it to the last bit every time.
One may dislike the form factor or the material of the scales, but conceptually this is the optimum for a stalking folder:
