So…something a little differeny out of the stables last week. This unique combination set of Fish Fillet knife and Oyster Shucker headed out to the Exec Chef of a well known Cornish Restaurant chain last week

Bit too curved for me as a filleter. I like a straighter blade profile presenting an edge to the flesh

I think the filleting knife would be a good deerstalking knife - maybe with a little curve on the top edge, and a very little more belly. I'm messing with making something similar at the moment.

Each to their own…. Knife was built to the customers personal preferences as a man that spends many hours preparing fish. If he’d have wanted a straight blade he would have got one

The oyster shucker is a nice design, the profile and grind of the blade make it really functional. I'd have preferred the handle to be a bit more rounded at the end but it looks really practical.

Thanks for feedback… the teardrop does feel really nice in hand but if you want a rounded handle I’ll make you one

The owner is very pleased with them & will use them 6days a week in a commercial capacity.
