What is it about venison?

Personally I think 'stigma' has a lot to do with it. Well made venison burgers or sausages do not or at least should not taste 'gamey'. Once people get over the psychological barrier and just taste it for what it is - then most actually like it.
But.....we probably all need to give more away and get as many people as possible giving it a try.

As a hunter I might be the odd one out. I eat it but I’m not excited by game meat in general.
I would never serve it without telling guests what it is. If they don’t listen I tried. I would not try hide its origin to tell them after the fact.
Cooking a rabbit I shot as a kid was more a novelty than great feed.
I have made some Venison snags that were bloody good but the last batch bordered on dry.
Eaten Roo, Tried Emu and Buffalo and a brace of game meat in South Africa. Didn’t mind the African stuff and the local preparation but still enjoy a lamb roast and a beef steak.
I have more interest in turning my Venison into small goods putting it through Salami, Mettwurst and using it for Biltong or Jerky.
My son really enjoys it and is happy to take a cut of my harvest.

A lot of my friends wife’s hate the fact I stalk deer (fallow and muntjac) can’t get their heads round it (hunting, field dressing ect) but mop up a plate of venison steaks.. go figure lol

If a venison burger or sausage is strong then either carcass hasn't been handled properly or added something overpowering ....
Or a rutting stag

I haven't had someone try a venison burger or sausage and say it wasn't good
Was offshore with a guy sitting at lunch whoxsaod what I did was cruel.....whilst he sitting g withe leather belt . Shoes & a leather jacket and eating a lips & ar5ehole beef burger !!!!! When pointedd out the difference and asked aren't cows entitled to decent husbandry and quality of life ?..... no answer!

My three girls now find chilli or bolognese made with beef to be flavourless/insipid. They're not all great fans of it fried or roasted whole (one is!), but they love it in sauces and stews.

I recently visited my brothers family and that of an old friend a few weekends ago. For both I prepared a Chinese water deer venison carpaccio with pine nuts, rocket, garlic, lemon and parmesan shavings. Not a single person declined to try it and some that were hesitant to start with ended up coming back for more
