Shot last night chopped up this morning (not running any chiller for one muntjac)
Older doe not pregnant with a hard udder (no milk) quite a large pelvic cavity, lot of grass matter going through the system on inspection.
Right from the start of skinning the layer of flank flat was flagging up, the fat around the stripped tail looked like the Parsons Nose from a large Turkey.
Left alone in these small blocks of scrub then they just pile on the layers.

May I make one suggestion when cutting the legs off you put the knife down or in it's sheath rather than holding the knife whilst twisting the leg round. That's how I cut through two tendons in my hand.

Sorry you cut your self but I remember a chap on here cut his hand open very very bad washing his knife in the sink and he was not cutting off a deer leg!

Personally I leave the legs (sometimes the head) on until back home as they make great handles to move a lumpy deer around.
Can you post a video of how you do it so others may learn your way?
A lot of people fiddle around with bone saws for the ribs, however!

Thanks for posting that. Nice neat job. Watched several times. I normally do a suspended (generally take Muntys and Roe). Just goes to show, every day is a school day.

Bill was shown "my way" of taking legs off as I saved a muntjac back with head/legs on which in my case I cut the back legs opposite to most demos as finding the "notch" can/is difficult. I start at the opposite side of the notch as there is no right or wrong way to do it. Just don't cut yourself open :old:

I'm not saying the way you cut the legs off is wrong. I just teach the guys that shoot for me to put the knife down before twisting the leg off.
 
I also don't like using a knife for splitting the rib cage because of the force that is needed. With force if something slips or goes wrong things can go wrong big time.
 
All i can say is Tim is very safety conscious when you are cutting.
He will stop you and show you a way as not to cut or hurt yourself.
Plus he will point out ways of doing things.
He as the charm of a builder but will let you know
All I can say I had a great time with him and learnt so much.
And now feel a lot safer with my knife work 👍
