Fallow buck venison

I have a stalk booked for a buck next week, and was wondering whether they make for good venison at this time of year, or if the rut taints the meat? 🤔

I primarily stalk roe, with the occasional sika, but have no experience with fallow so any advice would be welcome 👍
 
Shot a real stinker a few weeks back, butcher volunteered to sort him and tasted some of the meat before doing anything- said it tasted fine and sorted some roasting joints, loins, chunks and sausages and burgers. I was surprised as he smelt like a public urinal and had to wash all my clothes as I smelt of ****...and it wasnt mine (honest gov) :) 👍
 
Rutty Buck Stew 👍- I have eaten a fair few in rut. Can be a bit stronger in flavour- just use more seasoning. Would not be my choice to eat them this time of year.

^^^^^^^^^^^^^exactly this why on gods earth anyone would want to shoot a rutting fallow or red is beyond me, dirty stinking creatures and the venison isn’t much better
:lol: I always love this sort of response when someone has ser their heart set on doing something (and booked it) ..."I have booked to a trip to shoot a red stag"..why would you bother go and shoot a muntjac doe...wait ..its booked and Im doing it so stuff your opinion :lol::lol:
 
I'm now wondering if I should take a doe for the venison, and let the buck carcass go to the estate? 🤔
100% yes. To be fair I would always opt to shoot a doe (and a young one) or a pricket for the table. I am only eating a stinky buck as the game dealer didnt want it and the farmer wants as many shot as I can

The point I was making is why tell someone not to do something they have already booked .... like making something and getting...I wouldn't have done it like that. I'm not what I'd call a dedicated trophy hunter, but I've been promising myself a decent buck for a while now, and I don't want to pass it up. Happy to take a pricket or a doe as well though

Go for it...but if you can avoid eating the bugger then all the better. Ultimately a big fallow will be old and this probably has as much impact on the meat as the fact that he is rutting. Shoot the big boy for your wall and a doe for the table.

Im due a load of abuse from Tim and Lee anyway ... but alas I own a creed and dont give a flying ...well you know :lol:

For future reference, If you're looking to take a decent headed buck, I'd recommend the 2nd half of September. By that time they ought to have a bit of colour in their antlers after shedding velvet in August, but they won't yet have worn down the tips of the spellers or broken any bits off by fighting in the rut, so the shape and condition of the antlers will be at its best.

For the freezer, a pricket or young doe is always going to be your best option.
