Could you please tell me what the average weight of a graloched, skin on, head on or headless (please specify) roe deer is, seperate bucks and does if possible please.

12-15kg for does, 13-17kg for bucks In my particular area, there's quite a big variance in roe deer populations across this country and globally, bucks over 30 kilos in Spain isn't unheard of.

The youngsters regardless of sex can be anywhere from 6-11kg smallest one I had was 18lbs and that was including the gambrel in hindsight.

where I am in North Hampshire are averaging
Bucks 17 KG
Does 15KG
Worth noting it depends on your cull plan because I leave the big ones

Mature doe 14-22kg
Mature buck 13 5-21kg
Generally small antlers on bucks though.
Mid Lincolnshire
A lot of the Lincs deer cross the Fen from Thetford area. Fair weights but antlers as you say poor. I believe the genetics of ɓeasts from that area were never condusive to fine antler growth. I have a couple of good representative heads on the estate, but the others are poor, South Lincs.
